Salad Dressing That Won’t Make You Fat

Did you know…

Just 2 TBSP of a simple oil and vinegar dressing can be almost 1/2 of your entire fat quota for the day? Greens and salads are essential for optimum health and body shape,  it’s the dressing that kills you!  The no cal, no fat, no ‘everything’ dressings are full of chemicals that can affect your brain chemistry.  So what can you do?   Here is a salad dressing recipe from one of my favorite cookbooks; I incorporated a few of my own tips into the recipe.  Enjoy!

4 scallions

1.5 cups of 2% greek yogurt (instead of mayonnaise)

juice from 2 limes (about 1/4 cup)

Trim the ends off the scallions.  Roughly chop the white and green parts and place in a food processor or blender.  Chop until coarsely ground.  Add the greek yogurt and lime juice, and puree until smooth.  Dressing will store in the refrigerator for a week or more in a sealed container.

Tip 1: You can also add 1 seedless chopped cucumber to enhance flavor.

Tip 2: This recipe is also great for parties with chips and dip!
